Tandoori mousaka

That above is the nicest clump of Pleurotus I ever did see. The picture does not accurately convey the beauty of color it carried, this delicate smoked lover's squint of a notion around the edges. Pure poetry.

Unrelatedly, I recently received a small pot of tandoori spice, quite phenomenal.

Adding two and two together with other stuff, I proceeded to :

  • In a pot dump some corn oil, lightly dehydrate mixed ground meat halfway, in the company of two heads of garlic.
  • Cut up eggplants, potatoes, the mushrooms above, and in the leftover oils and juices of the meat, with some tomato paste, under a lid let them soften just a little.
  • Add the entire stuff, well mixed, to a clay Dutch oven, in layers with the tandoori in between.
  • Mix three eggs, heavy sour cream and flour, pour on top of the foregoing.
  • Seal the lid of the oven in butter and stuff it in the oven on a very low flame.
  • In an hour or so I will probably have the best tandoori mousaka you ever did see. Yay me.
